very healthy and tasty artichokes, which I adapted this recipe from a magazine, are very rich. It is very easy and fast. Both
accompaniment to any fish dish to serve as a starter.
Ingredients: 6 fresh artichokes
6 cloves garlic, fresh parsley
olive oil salt lemon
Preparation: - Peel the artichokes, removing all the leaves hard surface, and scraping the stem. Cut the stem end, leaving only a little.
- cut the top of the artichokes, almost by half.
- cut lemon in half and rub over the surface of the artichokes to eviar them from oxidizing and browning.
- in a big pot boiling salted water and cook until artichokes are tender and can click on the base of the head.
- carefully remove the artichokes and place them face down on absorbent paper to drain all the water.
Meanwhile peel and chop the garlic
Chop the fresh parsley.

In a large skillet, pour in a little olive oil and fry the garlic. Once they are golden add some parsley and then add the chopped artichokes, season and let fry over medium-high until browned a bit.
Serve hot.
